Bulgarian Sour Lamb Soup

Yield: 6 servings
1 ea Lamb shank
6 c Water
Salt & pepper to taste
1 tb Lemon juice fresh
1/2 ea Garlic clove minced
2 tb Sunflower oil
2 tb All-purpose flour
1 tb Hungarian sweet paprika
2 1/3 c Onion chopped
3 tb Dill fresg chopped
2 ea Eggs beaten
1 tb Parsley fresh chopped
2 tb Cider vinegar
2 tb Lemon juice fresh
Boil water then add all ingredients.
Reduce heat to a simmer then cook for 60-75 mins.
Remove from heat & set aside.
Heat oil in a large soup pot.
Brown lamb with onions until onions are translucent.
Remove meat from lamb shank in stock.
Add thisamb to the browned lamb.
Sprinkle in your flour & paprika.
Stir well then add stock.
Cook for 10-12 mins.
Add parlsey & dill then stir well.
Bring to a boil the reduce heat & simmer for 25-40 mins.
remove pot from heat then add eggs while stirring all the while.
Add viegar & lemon juice.
Serve while warm.
