This episode of “Chopped” called “Own It!” the host is Ted Allen and the judges are Marcus Samuelsson, Alex Guarnaschelli, and Chris SantosÂ—excellent chefs in their own right and who also appear on many other cooking shows.
The chefs competing in this episode are Miguel Escoledo, chef and owner of Papalote Mexican Grill in San Francisco, California; Nelly Godfrey, chef and owner of Lima’s Taste in New York City; Vito Facciabene, executive chef of Vibano’s Trattoria in Bronx, New York (who viewers found out lost his restaurant recently); and Kris Wessel, executive chef and owner of Red Light in Miami, Florida.
In the first round, their challenge was to make an appetizer in 20 minutes with the four mystery ingredients: Injera, Hearts of Palm, Mache, and Rabbit Escabeche. Vita made rabbit escabeche salad with toasted Injera using onion, bourbon, and olive oil. Miguel made rabbit escabeche sopes using corn tortilla, canola oil, and garlic. Kris made rabbit escabeche injera crepes using mushrooms, shallots, and olive oil. Nelly made Peruvian causa with rabbit stuffing using, potatoes, garlic, and peppers. The chef who was eliminated was Nelly.
For the entrÃ©e round, the ingredients were Goat Chops, Dragon’s Tongue Beans, Cinnamon Schnapps, and Dark Chocolate. Miguel made goat chops with ancho-chocolate rub using olive oil, garlic, and ancho chili peppers. Kris made seared goat with curried spice rub using onion, curry powder, and paprika. Vito made grilled goat chops with sauced sweet potatoes. Miguel was the chef who was “Chopped.”
The last two chefs had Hollandaise Sauce, Strawberries, Walnuts, and Blue Corn Tortilla Chips for the 30-minute dessert round. Vito made nacho dolce with strawberry sauce using heavy cream, sugar, and Grand Marnier. Kris made strawberry tarts using the ground nacho chips for the dough.
The winner of the $10,000 prize and bragging rights was Kris Wessel.
