I haven’t actually made this recipe yet but it looked so good I had to pass it on. I got this in a newspaper flyer that came in the mail while I was on vacation. I can’t wait to try this. I will make my own pre-made dough so it will take a bit longer but it will be worth it.
1/2 cup fresh mint leaves
1-1/2 cups coarsely chopped cilantro
1 clove garlic, chopped
1 tbsp fresh ginger, chopped
1/4 cup raw cashews
1 tsp kosher salt
6 tbsp peanut oil, or canola oil
1 pkg frozen bread dough, thawed
melted butter, for brushing dough
In a food processor, combine the mint, cilantro, garlic, ginger, cashews, and salt. Process until finely chopped.
Scrape down the sides, turn the machine back on and pour in the oil. Scoop the filling into a small bowl.
Divide bread dough into balls that can be rolled into 7″ circles. Spread the center with about 2 tsp of the filling.
Gather the edges up, pinching them together in the center, to seal in the filling. Turn the dough over and gently roll it into a 7 inch circle.
Bake according to package directions, carefully turning over once during the baking process when the naan pieces are slightly puffy and lightly browned on the bottoms. After turning over, brush with melted butter on the top. Serve warm.
Makes 8-10 servings
