Coconut & Cabbage Curry

Yield: 8 nservings
1 tb Olive oil
2 tb Butter
1 ea Onion sliced thin
1 c Carrots julienned
1 ea Garlic clove minced
1 ea cabbage head sliced
1/2 c Fresh shredded coconut
2 tb Golden curry powder
3/4 c Coconut milk
Salt & pepper to taste
1/4 c Diced fresh tomato
1/4 c Green onions chopped
1/4 c Cilantro chopped
Place a large skillet or wok over high heat.
Heat your oil & butter until smoking.
Stir fry onion, carrot & garlic until onion begins to soften.
Add your cabbage, coconut & curry powder then stir fry for 2 mins.
Reduce heat to med-low.
Pour in your coconut milk, then adjust seasoning.
Serve after you sprinkle with tomato, green onions & cilantro.
