Corned Beef Hash Recipe – St. Patrick’s Day 2010

After you’ve made a Corned Beef and Cabbage Recipe for St. Patrick’s Day 2010, make this delicious Corned Beef Hash Recipe with the leftover Corned Beef and potatoes.  Wonderful for breakfast, lunch or supper, this homemade dish outshines canned corned beef hash by a country mile!

Corned Beef Hash Recipe

3 tablespoons butter
1 cup chopped onion
2 cups chopped cooked corned beef
2 cups chopped cooked potatoes
pepper to taste
chopped fresh parsley

Heat butter in a large skillet.  Add onion and cook until soft.  Add corned beef and potatoes, season with pepper.  Mix well and spread evenly in skillet.  Allow hash to brown, do not stir.  Flip sections of hash with spatula and allow to brown on other side.  Sprinkle with parsley and serve with eggs and toast.  Serves 4.
