Cucumber-Cilantro Egg Salad

Yield: 4 servings

6 ea hard-cooked eggs chopped
3/4 c  cucumbers peeld & seeded & diced
1/4 c  shallots minced
1/2 c  green part of green onions sliced
3 tb fresh cilantro lightly packed chopped
1/2 c  mayonnaise
1 tb Small hot peppers minced
1/4 ts kosher salt
1/4 ts pepper freshly ground

Gently combine your eggs, cucumbers, shallots, green onions & basil in a bowl.
Stir in mayonnaise, minced peppers, salt & pepper.
Chill for 2-24 hrs.
Store in refrigerator for up to 3 days.
