We love Pumpkin recipes in fall.We make Pumpkin pie andÂ Pumpkin soup in fall but there’s a lot that can be done with pumpkin. Pumpkin becomes slightly sweetish when cooked and therefore compliments spices very well.Try making this North Indian style pumpkin curry.
3 cups of peeled and cubed pumpkin
2 medium onions chopped
1 tbsp grated jaggery
2 dry red chillis
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1 tsp coriander powder
1/2 tsp mustard seeds
1 tsp cumin seeds
10 cloves garlic slighly mashed
10 curry leaves
chopped cilantro for garnishing
First of all heat 2-3 tbsp of oil in a pan.
Then add the mustard seeds and let them splutter.
Add cumin seeds,dry red chillis,mashed garlic and curry leaves
Fry them till light brown
Now add chopped onions and fry till transparent
Add the cubed pumpkins,turmeric , salt and let it cook covered on low heat for 15 minutes
Then add chilli powder( if you want)Â ,coriander powder and jaggery.Mix well.
Add 1/2 cup water; cover and cook on slow fire till pumpkin is soft and cooked
At the end garnish with chopped cilantro.
You can also add sweet potato while making this.
