Gambas con Jamon – Grilled Shrimp Wrapped in Serrano Ham

2 plb large shrimp peeled & deveined
16 oz Serrano ham
4 tb olive oil
Salt & pepper to taste
Cut your jamon to 2″ long strips.
Sprinkle shrimp with salt & pepper then coat in olive oil.
Wrap each shrimp with a piece of jamon then thread on a skewer.
Place your skewers over a high temperature grill.
Cook for 2 mins. per side until shrimp are opaque.
