Lemony Greek Couscous Salad



1-1/2 cups water

1 cup couscous, uncooked

1/4 cup fresh lemon juice

1/4 cup olive oil

2 large tomatoes, chopped

1/2 cup sliced green onions

1 pkg. (4 oz.)  Crumbled Feta Cheese



1. Measure water into a saucepan and bring to a boil. Add couscous, stir and then remove from heat source. Allow to stand for about ten minutes and then fluff up with a fork. Allow to cool with the lid off for about a quarter of an hour.


2. Add remaining ingredients (except the cheese) to the couscous and cover. Transfer to the refrigerator over night so that the flavors can meld.
