McCormick Recipe Inspirations Rosemary Roasted Chicken with Potatoes

I was one of the lucky Gatherers chosen to review McCormick Recipe Inspirations. Everyday I hawked my mailbox hoping to find a package from Gather. I read a few mouthwatering recipes written by other Gatherers and the anticipation grew.

At the end of last week, I received McCormick Recipe Inspirations Rosemary Roasted Chicken with Potatoes. The package included a half dozen separately wrapped spice packets and a recipe card.

Additional ingredients required included 2 pounds of bone-in chicken thighs, 1 ½ pounds of red skin potatoes, 2 tablespoons of olive oil and 1 teaspoon of salt. The spices provided were rosemary leaves, ground black pepper, garlic and paprika. The ingredients were familiar as I use all of them to make my Chicken Paprikash and my family loves them.

Yesterday I went to the grocery store for the chicken and potatoes. My family does not like bone-in thighs so I bought the boneless ones. Other than that, I followed the recipe ingredients exactly. I also noted McCormick Recipe Inspirations cost $1.99 at our neighborhood market.

Tonight I prepared McCormick Recipe Inspirations Rosemary Chicken with Potatoes for dinner. I rinsed everything then cut up the red skin potatoes, leaving the skins on.

I mixed olive oil, salt and the spices in a separate bowl. My daughter and I placed the red skin potatoes and chicken skins in the bowl. We used a wooden spoon to move everything around until it was coated with the mixture.

Instead of using the foiled lined 15 x 10 x 1 pan as suggested, I used my trusty glass Pyrex baking dishes. I preheated the oven to 425 degrees. We laid out the potatoes and chicken in a single layer in the baking dishes. I put them in the oven and let them roast for 30 minutes.

The house smelled delicious! We couldn’t wait for dinner to be ready. The kids had to go outside to shoot a few hoops because the kitchen smelled like a gourmet restaurant.

Serving the meal was even easier than preparing it. I dished out the chicken and potatoes then watched everyone’s reaction. Everyone dove right in and cleared their plates in record time.

The entire family loved the roasted potatoes and seasonings. The flavor was perfect, without being too bland or too spicy. We agreed we might like the recipe even more if I used chicken breasts or boneless chicken cutlets as we prefer white meat. I will experiment with it in the future.

Otherwise, McCormick Recipe Inspirations Rosemary Chicken with Potatoes was a hit. We will definitely serve this again, even if I vary the recipe a bit. The preparation was easy and it only took a half hour to cook a yummy dinner!
