Ragu Iz Ovoshezh – Root Vegetable Stew

Yield: 6 servings
1 tb Sunflower oil
1 ea Onion chopped
4 ea Carrots peeled & cubed 1″
2 ea Potatoes peeled & cubed 1″
1 ea Rutabaga peeled & cubed 1″
2 ea Beets peeled & cubed 1″
1 ea Turnip peeled & cubed 1″
1 ea Parsnip peeled & cubed 1″
1 ea Celeriac peeled & cubed 1″
1 c Vegetable stock
1/2 c Parsley chopped
2 tb Butter
Saute your onion in oil over medi-heat until translucent.
Add allof your carrots, potatoes, rutabaga, beets, turnip, parsnip & celeriac.
Saute while stirring frequently for 8-10 mins. until vegetables begin to soften.
Add your stock then bring to a boil.
Cover then reduce heat.
Simer for 20 mie. until vegetables are soft but still hold their shape.
Add parsley & butter then stir until butter has melted.
Season with salt & pepper to taste.
Serve with mats, bread, etc.
