SIMPLE BANANA LOAF

This is a simple recipe for a loaf of banana-tasting goodness!

I had 5 bananas that were past their prime. I mashed them up and mixed in some grated lemon peel, lemon juice (to keep the banana from turning brown), candied orange peel and a handfull of dried cranberries. Add sugar to taste (I go very easy on this…)


Now I added about one cup whole meal semolina, two cups whole wheat flour and twice as much baking powder as you think you will need.

Bake at 340°F / 180°C till done

Here is a slice for you! Enjoy with your favorite additions: P&J if that sounds good, butter or margarine if that's what you like… For now, I am having it "plain."
