This is a great recipe during the winter months. Very easy to make and it takes just minutes to prepare. This will make two servings so if you wish to make more just double or triple the recipe. This goes great alone or with some hot grilled cheese sandwiches, Enjoy!
4 Large, Ripe Tomatoes
1/2 Stick of celery
1 Small green onion
6 Large basil leaves
1 Small clove garlic
Chop tomatoes and remove seeds. Push tomatoes through a sieve into a large bowl and remove what seeds remain.
Chop celery and onions.
Add tomatoes and juice into blender with remaining ingredients and add 1/4 cup of water.
Blend until smooth and then pour through sieve to remove any extra bits and seeds.
Heat in microwave and serve hot.
