A cheaper and hearty winter dinner for the family. This is very tasty and you can make it as spicy or as mild as you like. This quantity serves 4.
2 tablespoons vegetable oil
1.5lbs chuck steak – diced
1 brown onion – finely chopped
1.25oz packet chili seasoning (add more chili for extra spicy)
15oz can chopped tomatoes
15oz can red kidney beans – drained and rinsed
Heat 1 1/2 tablespoons oil in a large saucepan or stockpot, over high heat.
Cook the chuck steak in batches, for 2 to 3 minutes or until browned, then remove and place on a plate.
Reduce the heat to medium and heat the remaining oil.
Cook onion until soft and add the seasoning, tomato, beans and 1/4 cup cold water, bringing to the boil.
Return the meat to the pan and season well with salt and pepper and Bring back to the boil.
Reduce the heat to low, cover and simmer, stirring occasionally for 40 to 45 minutes or until beef is tender.
