Southern Love in Your Tummy: Monica’s Super Yummy Chicken Salad

I made this chicken salad for our family reunion in NY for us to eat for lunches and it was a smash hit. I always have people ask me for this recipe, and now that the family is asking too I figured I better write it out. I am not much of one for measuring, though, so this is the gist of what I do. Taste as you go and decide if you need more of anything. Enjoy!

Monica’s Super Yummy Chicken Salad

1 cup mayonnaise

1 tsp ranch salad dressing mix

1 tsp McCormick’s Perfect Pinch® Salad Supreme Seasoning

2 tsp Pampered Chef Dill Mix

1 tsp Mrs. Dash

¼ teaspoon garlic powder

1 tsp fresh cracked McCormick’s Peppercorn Medley (or black pepper)

4 boiled eggs, diced

½ cup finely diced celery

½ cup finely diced dill pickles (I prefer Claussen)

½ cup crumbled walnuts

1 cup finely shredded sharp cheddar chees)e

2 13 ounce cans chicken breast meat, drained

OPTIONAL: 1 cup grapes or raisins or craisins – YUMMY!

Combine mayonnaise and seasonings in a medium size bowl, then stir in remaining ingredients. Taste and add additional spices or mayonaise if desired.

For the reunion, I bought one big can of chicken (50 ounces) from Sam’s Club and doubled this recipe. Fresh spinach, sliced tomatoes, and cilantro go great with this on a sandwich.
