Thumbs Up From A Picky Eater – Veggie Pancakes

My three-year-old son has inherited my pickiness, and he goes to bed without dinner more often than he actually eats dinner. I have tried every method in the book, but it is very simple. He is a picky eater, and he is stubborn as well…just like I was and still am. In agreement with his doctor, we have decided that the best thing is to put the dinner in front of him, and if he does not eat anything he gets nothing else but water for the night. If he eats his dinner, he will get juice and/or milk and maybe a snack later on.

It is not really that bad though, because on the nights where he does not eat dinner. He eats a whole lot for breakfast (oatmeal, banana, apple, oj etc.).

I sure feel for my mother though, because I put her through the same thing that my son is putting me through, just until the day she let me become a vegetarian. I have been a vegetarian ever since.

Well, finding ways to get my picky eater to get the nutrients he needs can be quite challenging, but I am doing what I can.

Over the summer I discovered a recipe for squash pancakes in the Woman’s Day magazine, and this worked very well. Since then I have played around with the recipe once in a while, and it seems to be a hit every time.



This is tonight’s recipe for Veggie Pancakes:

1 zucchini (shredded)

2 carrots (shredded)

1 potato (shredded)

A handful of spinach leaves torn to pieces

3 eggs

1 pouch of Betty Crocker corn muffin mix

1/2 cup of Bisquick

2 cups of lactose free milk

a tiny bit of salt and pepper


Butter or olive oil for the pan


Heat the shredded vegetables in the microwave for two minutes. Mix the rest of the ingredients and add the shredded vegetables. Heat the pan, add a tiny bit of butter. Add about 1/2 cup of the batter, cook till brown and turn.

The final result. Thumbs up from both boys, and I personally love it as well.


1 can of tomatoes

A handful of torn basil leaves (ah the joys of fresh basil from the garden)

chop up some garlic

Salt and pepper to taste.

Bring everything to a boil, turn down the heat and stir once in a while.
