In our house, we have totally fallen in love with the recipe for Oven Fries from the first issue of TV Food Network Magazine. It is from Ellie Krieger. I have fallen in love with the magazine too.
They come out just like real french fries and everyone thinks you have fried them. Really!
Make sure that you cook them as crispy as you can. If they seem a bit undercooked and not browned by 40 minutes cook them for a bit longer. Watch them carefully though so they don't burn.
These are so good. This is a new adaptation of the recipe using cajun seasoning. The original recipe did not call for any seasoning except a bit of salt.
I like my fries seasoned well. Mmmm….

Cajun Oven Fries

4 medium russet potatoes — cleaned
2 tb olive oil
Preheat oven to 450 degrees F.
In a large bowl, combine the matchstick potatoes, olive oil, salt and cajun seasoning. Mix well.
Place a sheet of heavy duty tin foil on a cookie sheet. Spray with olive oil cooking spray. Place fries on the sheet pan in one layer.
Cook at 450 degrees for 30-40 minutes, turning over the fries halfway, and cook until browned and crispy.
