Tonight’s Side Dish: HoeCakes

This was the side dish – Hoecakes. If you go to The Lady & Sons you will get a pile of them at the table when you walk in, those and biscuits. Yummmy.


1 cup self-rising flour

1 cup cornmeal*

2 large eggs

1 tbsp sugar

Pinch salt

1/4 cup buttermilk

1/2 cup plus 1 tbsp water

1/4 cup unsalted butter, melted

Vegetable oil, for frying

In a medium bowl, mix together all the ingredients except the oil.

In a large skillet, heat 1/8 inch of oil. When oil is hot, drop 2 tbsp of batter into skillet for each cake.

Cook cakes about 2 minutes or until crisp and brown on bottom; turn cakes over and cook about 1 minute more or until second side is brown. Transfer cakes to a paper towel-lined plate. Serve hot.

Risa’s notes:

*original calls just for plain cornmeal, I used organic cornmeal.

Also, I did not have buttermilk so I mixed plain 1% milk with a bit of lemon juice for the acid component. It curdled a bit and then I mixed it with the remaining wet ingredients.

Yield: 15 cakes
