Can you tell I love salads in the summer? This salad was inspired when I had a few shrimp and corn left over from a shrimp boil. The spiciness of the shrimp and corn really added some great flavor! Interestingly enough, I saw almost the exact same thing in Rachael Ray’s Magazine the other day when I was flipping through!
South West Shrimp Salad
Corn cut off of the cob
Red pepper, sliced
Sprinkle of cheese of your choice
Dressing of your choice (I used just a little Ranch)
