What's for Dessert? Gingerbread Cake with Citrus Glaze

If you like molasses, you will love this cake! 

1 1/4 cup flour
1/2 t baking soda
1-2 t cinnamon
1/8 t nutmeg
1/2 t fresh ginger, grated
1/2 cup light molasses
1/2 cup sugar
1/2 cup butter, melted
1/2 cup buttermilk
1 egg

Preheat oven to 350°F. Spray an 8” square baking pan with cooking spray.

Sift flour, soda, cinnamon and nutmeg into medium bowl.

Combine ginger, molasses, sugar, butter, buttermilk and egg in large bowl; whisk to blend. Stir in dry ingredients. Pour batter into prepared baking pan.

Bake 25 minutes or til toothpick inserted into the center comes out clean. Cool cake completely in pan on rack.

Citrus Glaze
1 cup powdered sugar, sifted
orange juice as needed to thin glaze
1 t fresh lemon juice
1 t dried grated orange peel
1 t vanilla

Combine in medium bowl until smooth. Taste and adjust as needed. Pour over cooled cake. Let sit for 15 minutes and serve!
