Tonight I'm having leftovers from what I made last night. I started out with a recipe from Vegetarian Times, but I made so many substitutions it's pretty much my own now!
Slow Cooker Vegetable Vindalo
This is a very hearty vegetarian dinner
3 C broccolli
3 C potatoes, cut into large chunks
1 15 oz can chickpeas, drained
1.5 onions, cut into large chunks
1/2 cup TVP plus 1/2 cup hot water
1 can tomato sauce (about 1 cup)
1/4 C apple cider vinegar
1/4 C water
2 tsp ground ginger
2 T curry powder
3 cloves garlic, minced
2 tsp cumin
1/2 tsp cinnamon
1/2 tsp allspice
2 tsp Tabasco or other hot sauce
Combine all but the brocolli and TVP into the crockpot. Season with salt and pepper. Cook on high for 2 hours, stirring occasionally. After two hours, add the broccolli and TVP and cook for an additional hour.
Serve on top of brown rice.
This dinner was easy to make, and delicious!
