What’s for dinner? Slow cooker sausage and pinto bean soup recipe

I made this soup a while ago, but forgot to post the recipe. It is delish and perfect for a cool spring day.

1 carrot, thinly sliced
2 celery stalks, chopped
1 onion, chopped
1 lb Kielbasa or smoked sausage, sliced
1 cup dried pinto beans
1 large can diced tomatoes 
1 bay leaf
pinch of thyme
salt and pepper to taste
6-8 cups beef broth or water

Combine all ingredients in slow cooker. Cover and cook on high 5-6 hours (or low 8-9).

Discard bay leaf before serving.
