What’s for dinner? Taste of Home’s Southwest goulash recipe

What an easy take on regular goulash!
  • 2 cups uncooked elbow macaroni
  • 1 lb lean ground beef
  • 1 small onion, chopped
  • 1 large can (28 oz) diced tomatoes
  • 1 cup frozen corn
  • 1 can (4 oz) chopped green chilies
  • 1/2 t ground cumin
  • 1/4 t pepper
  • 1/4 t salt
  • 1/4 cup minced fresh cilantro
  • shredded Mexican blend cheese (optional)
  1. Cook macaroni according to package directions.
  2. Meanwhile, in a Dutch oven over medium heat, cook beef and onion til meat is no longer pink; drain. Stir in the tomatoes, corn, chilies, cumin, pepper and salt. Bring to a boil. Reduce heat; simmer, uncovered, for a few minutes or til heated through.
  3. Drain macaroni well; add to meat mixture.
  4. Stir in cilantro.
  5. Serve sprinkled with cheese if using.
