WHITE WINE AND SHALLOT POTATO SALAD

I got the recipe for this in my Gourmet newletter.  I think it looks absolutely delicious!  And best of all, it’s not full of mayo like some recipes are.  I think  I may be trying this one out this weekend since I have potatoes I need to use! 

WHITE WINE AND SHALLOT POTATO SALAD
SERVES 6
ACTIVE TIME: 20 MIN
START TO FINISH: 1¼ HR (INCLUDES COOLING)

Potato salad is everyone’s favorite warm-weather side dish. Here’s a grown-up version that’s elegant enough for entertaining, and, better yet, comes together with a mere six simple ingredients.
½ cup finely chopped shallots
⅓ cup dry white wine
3 Tbsp white wine vinegar
3 lb hot cooked small (2-inch) boiling potatoes, quartered
⅓ cup chopped flat-leaf parsley
¼ cup olive oil
• Combine shallots, wine, vinegar, and 1½ tsp salt in a large bowl and add hot potatoes, tossing to coat. Let stand until cooled to warm, about 30 minutes, then stir in parsley, oil, and ½ tsp pepper. Serve warm or at room temperature.
