Zeberka Wieprzowe w Kapuscie – Polish Pork Ribs & Sauerkraut

Yield: 6 servings

6 lb Country-style pork ribs cut 1 1/2″ thick
3 ea Garlic cloves minced
Salt & pepper to taste
2 lb Sauerkraut drained & rinsed
4 c Applesauce
4 tb Brown sugar packed
2 tb Caraway seeds

Pre-heat oven to 450 deg-F.
Wash then dry pork ribs.
Rub ribs all over with garlic, salt & pepper.
Place ribs meaty side down in a shallow roasting pan then roast for 20 mins. uncovered.
Reduce oven temperature to 250 deg-F.
Turn ribs so they are now meaty side up.
Combine sauerkraut, applesauce, brown sugar & caraway seeds stir to mix well.
Pour over pork ribs.
Cover roasting pan then bake for 1 1/2-2 hrs.until meat is tender.
