This dish is great as a snack, or as a main served with salad, chips or both! Whether you eat it cold in summer or warm in winter, it’s a great way to get the family, including the kids, to eat veggies without really noticing. This recipe takes around 40 mins and makes about 15 slices. It can have many variations, sometimes I add olives or tomato to the top, or just chop the zucchini instead of grating it.
1 cup self-raising flour, sifted
1 1/2 cups grated zucchini
1 large onion, finely chopped
1 cup chopped rindless bacon
1 cup grated
1/4 cup vegetable oil
Grease 12″ x 8″ baking dish.
Beat the eggs in a large bowl until mixed well
Add the flour, stirring until combined.
Add zucchini, onion, bacon, cheese and oil and stir well.
Pour into the baking dish and bake in the oven for 30 minutes or until cooked through.
